Mercury Chocolates is the artisan chocolate branch of Silver Culinary. We make custom chocolates using the best cacao from sourced fair trade suppliers in Venezuela, Ecuador, Sao Tome, and Grenada. In July 2009 a "Dessert Chocolate Line" was launched for restaurants that needed a special touch.
Featured in July is a 72% Dark Sao Tome chocolate filled with Goat cheese. This was created for clients that didn't want to switch wines after a rich dinner. Our chocolate pairings taper down the savoury to sweet transition. For those that need a sweeter rush, "Manon" a 40% chocolate from Ghana was paired with a Galliano scented Mascarpone.
